A traditional South American infusion made from the green leaves of the yerba mate tree, a relative of the holly. Originating in Paraguay and embraced across Brazil and Argentina, mate was first enjoyed by indigenous communities before becoming the drink of the Gauchos, the legendary South American cowboys.
Mate is renowned for its smooth, sustained energy, offering stimulating effects that last longer than coffee. Short infusions produce a more invigorating brew, while longer steepings yield a softer cup. Rich in tannins and vitamin C, mate carries a light caramel flavour that pairs beautifully with fruits, orange peel, or herbs such as peppermint and lemongrass. It can be enjoyed hot or cold, with or without milk, making it a versatile and refreshing choice.

Serving suggestion:
We recommend brewing herbal infusion with water at around 100 degrees Celsius. Steep the herbs for approximately 3 minutes, then taste to see if the strength suits your preference. If you desire a stronger brew, you may steep it for another minute or two. Use a teapot with an infuser for best results. If a teapot is not available, an infuser ball, infuser cup, or a fine mesh strainer will also work well. For each serving, use about 3 to 4 grams of herbs, or roughly one teaspoon. This infusion may be steeped a second time; simply extend the brewing time to draw out the remaining flavour.
