One of China's most distinguished black teas, Keemun is revered for its smooth elegance and enduring history. Grown near Shanghai in the misty mountains of Anhui province, this tea is cultivated at altitudes of around 1,000 metres, where cooler temperatures and rich soil contribute to its refined character.
The term "Congou" refers to the careful selection and processing of mature leaves, specifically the fifth leaf from the top of the tea bush. This imparts a deeper and more robust body, while still preserving the tea's delicate balance of sweetness and earthiness.
Upon infusion, Keemun reveals a rich red liquor with a gentle smokiness, a touch of dried plum, and a lingering sweetness. It is a graceful tea that embodies centuries of Chinese tea mastery, appreciated by connoisseurs for its quiet complexity.
Serving suggestion:
We recommend brewing black tea with water at around 95 degrees Celsius. Steep the tea for approximately 3 minutes, then taste to see if the strength suits your preference. If you desire a stronger brew, you may steep it for another minute or two. Use a teapot with an infuser for best results. If a teapot is not available, an infuser ball, infuser cup, or a fine mesh strainer will also work well. For each serving, use about 3 to 4 grams of loose leaf tea, or roughly one teaspoon. This tea may be steeped a second time; simply extend the brewing time to draw out the remaining flavour.
