Ali Mountain, known as Alishan in Taiwan, is one of the island's most treasured tea-producing regions. This high mountain oolong tea captures the purity of misty peaks, crisp air, and rich soil where it is cultivated. Only the most tender two leaves and a bud are hand plucked and carefully processed to preserve the integrity of each element within the leaf.
What makes this tea extraordinary is its ability to evolve through multiple infusions. Each brew brings out a different layer of aroma and flavour, from floral to woody to sweet. This transformation reflects the ever-changing nature of the four seasons and the elements. Drinking this tea is not a single moment, but an unfolding journey of taste and feeling, one that is different each time and deeply personal.
Taiwanese tea culture celebrates this complexity with the use of special fragrance and tasting cups. These vessels allow one to fully experience the aroma, texture, and energy of the infusion. Whether sipped in quiet reflection or shared in ceremony, this tea invites you into a deeper connection with nature, time, and self.
Serving suggestion:
We recommend brewing oolong tea with water at around 85 degrees Celsius. Steep the tea for approximately 3 minutes, then taste to see if the strength suits your preference. If you desire a stronger brew, you may steep it for another minute or two. Use a teapot with an infuser for best results. If a teapot is not available, an infuser ball, infuser cup, or a fine mesh strainer will also work well. For each serving, use about 3 to 4 grams of loose leaf tea, or roughly one teaspoon. This tea may be steeped a second time; simply extend the brewing time to draw out the remaining flavour.
