Fish Gelatine has multiple functional properties, including gel formation, thickening, glazing, stabilising, emulsion and film formation, foam formation, syneresis, and water binding. Instructions For Culinary Use:

Bloom (activation): Sprinkle gelatine over 5 to 6x its weight in cold water (eg: 10g gelatine in 50-60 ml water).

Let stand for 5-10 minutes to absorb and swell.

Gently heat (40-60 C) until fully dissolved.

Setting ratios:

Firm jelly: ~20 g gelatine per 1 L liquid.

Soft, creamy texture (mousses/panna cotta): ~10-15 g/L.

Gummies/candies: ~ 25-30 g/L for chewiness.

Chill for 4-6 hours (or overnight) for full set.

Warnings:

  • Never add to boiling liquid directly without first blooming in cold water - it will clump and lose strength.
  • Do not boil after dissolving, high heat degrades gelling strength.
  • Acidic fruits (pineapple, papaya, kiwi) contain enzymes that destroy gelatine's gelling ability unless heated first.
