Why amber glass:
- Light is what degrades olive oil fastest - faster than time on the shelf
- Amber glass blocks the wavelengths that break the oil down; clear glass and PET do not
- Glass is inert - it holds no odour and leaches nothing into the oil

How to use it:
Finishing: drizzle over salads, grilled vegetables, soups, pasta and grilled meat just before serving - extra virgin oil is at its best uncooked, where you can actually taste it.
Dipping: serve in a shallow bowl with fresh bread, a little salt and a grind of pepper. Add balsamic, dried oregano or chilli flakes.
Dressings and marinades: three parts oil to one part lemon juice or vinegar, salt and pepper. Shake and serve.
Everyday cooking: suitable for sautéing, roasting and pan frying at moderate heat. For very high-heat frying, use a higher smoke point oil.
Storage:
Keep the cap closed, in a cool, dark cupboard away from the stove. Olive oil may cloud or partially solidify in cold weather - this is normal and it clears at room temperature.
