The palate is generous and textured, with layers of citrus and stone fruit balanced by a fine natural acidity. A flinty mineral edge adds length and focus, creating a precise finish.
Ageing Potential:
Enjoy now for vibrancy, or cellar for 3-5 years to gain honeyed, toasty complexity. The Semillon component ensures depth over time.

Seared tuna, oysters, and salmon sashimi. Locally, pair with fresh West Coast oysters or steamed asparagus with hollandaise.

Vineyards & Harvest:
From cool south-facing vineyards overlooking False Bay. Soils of decomposed granite with clay subsoils help preserve acidity and fruit expression. Grapes were hand-harvested in the cool mornings.
Vinification:
Grapes were crushed and given 6-8 hours skin contact before pressing. Fermentation took place in a mix of French oak barrels (10% new), concrete eggs, and older barrels. The wine matured 8 months on lees for added richness and complexity.
