Overview
The body requires sugar, primarily in the form of glucose for energy. Glucose is derived from simple sugars (carbohydrates) and complex sugars (carbohydrates). Simple sugars like glucose, fructose (fruit sugar), lactose (milk sugar), dextrose, corn syrup, maltose, sucrose (white table sugar) and galactose, all raise blood glucose levels very quickly (high glycaemic index) which causes an equal rise (spike) in insulin release from the pancreas. Insulin is a long chain of amino acids (the building blocks of protein) molecule, whose principle job is to transport glucose into the cells and mitochondria (the cells power houses) to combine with oxygen and produce energy. White flour, white bread, white rice, white pasta and white potato (including mash potato) are all converted rapidly to glucose which raises blood sugar and insulin levels significantly over a short period of time. Unfortunately high levels of sugar and insulin in the blood cause inflammation and damage to the blood vessels and nerves and eventually organ damage of the heart, brain, kidneys, eyes and immune system. If the sugar is not all used up for energy production it is converted to fat. Chronic high sugar levels and constant insulin secretion from the pancreas leads to obesity, diabetes, high blood pressure, elevated “LDL” cholesterol and triglyceride fats and metabolic syndrome. There are a number of nutritional agents and plant substances which can help to reduce or balance and control sugar and insulin levels in the blood and cells. Complex carbohydrates like wholewheat or multigrain bread, brown or wild rice, sweet potato with the skins on and lentil or vegetable pasta, all release glucose slowly into the blood stream (low to moderate glycaemic index) and lower insulin secretion and levels, therefore causing less harm and less weight gain and less risk of diabetes.
